Mince Pies

The ultimate bake at Christmas- can you beat a homemade mince pie? I am a strong believer in making multiple batches on the run up to the big day so you can achieve the perfect one ready for Father Christmas! These are super simple to make with kids and it makes a great family tradition. Whilst I think these are best eaten still warm straight out of the oven, these will keep for 3-5 days in an airtight container.

For The Pastry

  • 250g Plain Flour
  • 50 Icing Sugar
  • 125g Butter, cubed + Extra for Greasing
  • 1 Egg
  • Splash of Whole Milk

For The Filling

  • 1kg Jar of Mincemeat (Roughly 12 Heaped Spoonful's)
  • 1 Orange
  • Small Chunk Melted Butter
  1. To make the pastry add the sugar and flour together in a large bowl and rub in the butter with your fingertips until it resembles breadcrumbs. Whisk the egg, then add it in, along with a small splash of milk. Bring the mixture together with your hands until you have a rough dough. Alternatively you could put it all in a blender until you have a dough.  Wrap the pastry dough in clingfilm and pop it in the fridge for 30 minutes.
  2. Grate the orange zest then add it to a large bowl along with the mincemeat- stir to combine.
  3. Preheat the oven to 220C/200C Fan/ Gas 7 and grease a muffin tin with butter
  4. Flour a surface and roll out your pastry to about 2-3mm and cut out 12 large circles (you may need to bring the dough back into a ball and re-roll several times). Place the pastry into the greased muffin tin.  With the remaining pastry, cut out 12 stars and put to one side.
  5. Spoon the mincemeat into the pastry cases and top each with a pastry star. Brush with melted butter.
  6. Bake for 15 minutes or until golden brown.  Leave to cool in the tin before serving.
