Rocky Roads

This is a classic no-bake recipe to make with kids. Definitely not on the low-sugar side though so one to be kept for special occasions!

Preparation: 15 mins

Chilling Time: 2-3 hours minimum

Ready In: 3 hours (inc. chilling time)

  • 300g Milk Chocolate
  • 3tbsp Golden Syrup
  • 150g Butter
  • 100g Rich Tea Biscuits
  • 100g Raisins
  • 100g Mini Marshmallows
  • 200g White Chocolate (optional)
  • Icing Toppers (optional)
  1. Melt the milk chocolate, butter and golden syrup in a large bowl over a pan of simmering water.
  2. Stir in the biscuits and raisins, then finally the marshmallows. Pour the mixture into a high sided dish approximately 30cm x 20cm, which has been lined with baking parchment. Put in the fridge to chill.
  3. Optional step. Melt the white chocolate in large bowl over a pan of simmering water. Pour the mixture over the rocky roads, spread it evenly with a spatula trying not to mix in the darker chocolate below, then place the icing toppers on top. Place in the fridge again to cool. Slice and serve.

Additional Information

Please be aware that marshmallows can be a choking hazard for small children, and therefore I would recommend only making this with children roughly above the ages of 4-5.
