Brie & Cranberry Parcels
These are the worlds best starters, and they can be a fun one to make with kids too. It isn't truly Christmas until I have had one of these- my Dad makes these every year and I now have to fight my kids for dibs!
Makes: 12
Preparation: 20 mins
Cooking Time: 10 mins
Ready In: 30 mins
- 1 Pack Filo Pastry
- 200g Brie
- 12tsp Cranberry Sauce
- 75g Melted Butter
- Preheat the oven to 180C/160 Fan/ Gas 4
- Cut the filo pastry into squares, roughly 15cmx15cm (I just cut mine into quarters). Stack 3 squares on top of each other at a bit of an angle, brushing with butter as you go. Pop into a muffin tin.
- Put a blob of cranberry sauce in the middle, followed by a bitesize chunk of brie. Repeat these steps until you have filled the muffin tin with 12 parcels.
- Bring up the sides of the filo pastry and cover the top, slightly twisting and scrunching at the top to form a parcel. Brush with more melted butter.
- Bake for roughly 10 minutes or until golden brown.
- Cool slightly before serving.

Additional Information
The quantities above are quite rough, just fill the parcels with a generous amount! You could use different sauces and cheeses if you like- for example, I have used a fig chutney and stilton which worked really well.
