Corn Ribs
These corn ribs are a perfect way of making food fun and tactile for your family (and might even tempt a fussy eater, you never know!). They also make a great veggie option at a BBQ.

- 2 Corn on the Cobs
- 50g Unsalted Butter, or dairy free butter
- 1tsp Smoked Paprika
- 1 Lime
- Preheat the oven to 200C/180C Fan/ Gas 6
- Quarter 2 corn on the cob lengthways into quarters. This is best to do by standing it up on its end and using a *sharp* knife cutting down the centre. Put the two halves back upright again so it looks like you haven't cut it and cut again to make quarters- this helps reduce the chance of the corner rib splitting.
- Melt 50g unsalted butter and mix in 1tsp smoked paprika. Place the corn in a high sided dish lined with foil (I use a rectangular pie dish). Pour over the butter and then brush any bits you have missed to ensure it is evenly coated.
- Fold the foil over to create a sealed foil packet and pop in the oven for 30 minutes.
- Squeeze the juice of 1 lime over the corn and serve.

Additional Information
You may want to avoid serving these to children under 12 months- thinner quarters especially can snap easily, so just ensure they are sturdy enough and child is well supervised prior to giving these to small children- you could always cook whole/half corn on the cobs with the butter glaze for younger children until they are old enough to bit the corn ribs.
