Cowboy Salad

This easy salad is perfect to get kids helping in the kitchen and great for lunch or as a side at BBQs. This is my son's creation (what he imagined a cowboy would eat) so full credit goes to him. See notes for how kids can get involved in making this!

  • 400g Tin of Red Kidney Beans
  • 1 Red Pepper
  • 1 Ripe Avocado
  • 200g Feta
  • 198g Tinned Sweetcorn (about 80g drained weight)
  1. Drain the red kidney beans and sweetcorn and add to a bowl.
  2. Chop the peppers, feta and avocado into bite-size pieces. Add into the bowl. Squeeze in the lime juice and give everything a stir. Serve.

Additional Information

If you want small kids to help make this remove the sweetcorn and kidney beans for the tins to avoid cutting themselves on sharp edges- they can then spoon/tip the ingredients into another bowl if they want. Feta is easy to chop as is as it is soft and flat. However, you may wish to cut the pepper into quarters (giving them a flat piece to work with ) to allow them to cut the pepper down further and you may also wish to give them 2 halves of an avocado with skin and stone removed, again, to help them chop it themselves as you are giving it in a form with a flat surface to reduce slipping. Ensure they are using an age-appropriate knife too.
