Cauliflower Tots

Cauliflower Tots, Veggie Nuggets- doesn't matter what you call them, these are delicious! This is a great recipe to make with your kids at home, and is perfect for snack time, lunch or main meal. They are suitable for baby led weaning too!

Makes: 12-20

Prep Time: 20 mins + cooling

Cooking Time: 25 Mins

Ready in: 45 mins + Cooling Time

  • 1 cauliflower, florets (330g-ish)
  • 1 clove garlic, crushed
  • 100g grated cheddar
  • 140g breadcrumbs
  • 1tbsp fresh parsley, chopped
  • 2 eggs
  1. Prep: Blitz the cauliflower in a food processer until a fine crumb. Tip the cauliflower into a large frying pan with the garlic and dry fry over a medium heat for about 5-10 minutes, to cook the cauliflower. Then leave the cauliflower in the pan to cool completely and dry out.
  2. Preheat the oven to 190C/170C Fan/Gas 5. Crack the 2 eggs into a bowl, give them a whisk, then add all the other ingredients. Mix them all together, then take a handful of mixture, form a ball then lightly press down on a lined baking sheet to make a nugget shape. Repeat for the remaining mixture.
  3. Bake in the oven for 25 minutes, or until golden brown, turning halfway through.

Method
