Veggie Tagine

Suitable from 6 months+, this veggie tagine is a healthy meal the whole family can enjoy. This meal is a good way of introducing mild spice into the diet, as well as providing an excellent batch-cook/freezer option for us parents to have on standby for those days where we are too rushed to cook.

Serves: 4 Adults (or lots of little portions)

  • 1 White Onion, diced
  • 1 Garlic Clove, crushed
  • 1 Courgette, diced
  • 1 Aubergine, diced
  • 1 Pepper, diced
  • 400g Tin of Tomatoes
  • 400g Tin of Chickpeas, drained
  • 1 tsp Ras El Hanout
  1. Sautee the onion in the olive oil in a large pan for 5-10 minutes, until soft. Add in the remaining ingredients, as well as half a tin of water (I swill the tin of tomatoes).
  2. Bring to the boil then allow to simmer for 30 minutes.
  3. Serve with some cous cous

Additional Information

This is a dish which is great to do as a family meal, but freezes really well in small portions and the cous cous side is so quick to put together it is a really handy standby meal. The diced vegetables are great for introducing lumps for chewing as all the vegetables are soft, but slightly different textures, and can be easily mushed or pureed if you want to make it smaller or smooth.
