Cajun Chicken Nuggets
These chicken nuggets are great to make with kids, and they are a great way of introducing mild spices in a food often deemed 'safe' by many kids.

- 50g Plain Flour
- 2 Eggs
- 125g Breadcrumbs
- 2 Tbsp Cajun Seasoning
- 600g Chicken Breast Mini Fillets
- Preheat the oven to 200C/180C Fan/ Gas 6. In one large bowl add the plain flour and 1 tbsp of cajun seasoning and mix. In a separate bowl whisk the 2 eggs. In a third bowl, mix the breadcrumbs and final tablespoon of cajun seasoning.
- Dunk one piece of chicken first in the flour, turning it with your hands to thoroughly cover it. Then put it in the egg mixture to throughly coat it. Finally, put it in the third bowl of breadcrumbs, and turn it continually until it is completely covered. Place on a baking tray lined with parchment paper. Repeat for the remaining pieces of chicken.
- Bake in the oven for 20 minutes or until cooked through.
