Tomato Quinoa Nuggets

These are so versatile, you can have them hot or cold, as a snack, part of a picnic, on a sandwich, part of a picky tea, or as a veggie nugget for your main meal, and they are suitable for the whole family. What's not to love?!

  • 150g Cooked Quinoa (cooked weight, cold)
  • 50g Cheddar, grated
  • 1 Egg, whisked
  • 1 tbsp Tomato Puree
  • 1 tsp Fresh Basil, chopped
  1. Tip all the ingredients in a large bowl, and thoroughly combine. Form into balls, about 10 per batch, and place onto a baking tray lined with greaseproof paper.
  2. Bake for 25-30 minutes at 200C/180C Fan/ Gas 6, turning over half-way through. During the cooking time the balls will flatten slightly. They should be cooked through and golden when done.

Additional Information

These are great to make with kids- just make sure there is a bowl of soapy water nearby because of the raw egg!
