Fruity Lamb Tagine

This fruity lamb tagine is just what you need on a weekend when you want a delicious, healthy meal, but you really don't want to invest the time in making it! You can get the kids involved in making it too!

  • 650g Chopped Lamb
  • 400g Tin Chopped Tomatoes
  • 1 Small Butternut Squash
  • 50g Prunes
  • 50g Dried Apricots
  • 200ml Chicken Stock
  • 1 tbsp Ras el Hanout
  • 1 tbsp Cumin
  • 1 tbsp Ginger
  • 1 tbsp Cinnamon
  • 1/2 tbsp Turmeric
  • Black Pepper
  • Fresh coriander to garnish
  1. Chop the prunes and apricots into small chunks, or get the kids to snip them with some safety scissors. Peel and chop the squash into bitesize chunks.
  2. Put the lamb into a tagine or casserole dish with lid, cover in the spices and mix completely, then add all the other ingredients, except the fresh coriander.
  3. Put the lid on, and cook in a preheated oven at 150C/Fan 130/Gas 2 for 3 hours.
  4. Serve with sultana cous cous, flatbreads and fresh coriander.
