Fruity Lamb Tagine
This fruity lamb tagine is just what you need on a weekend when you want a delicious, healthy meal, but you really don't want to invest the time in making it! You can get the kids involved in making it too!

- 650g Chopped Lamb
- 400g Tin Chopped Tomatoes
- 1 Small Butternut Squash
- 50g Prunes
- 50g Dried Apricots
- 200ml Chicken Stock
- 1 tbsp Ras el Hanout
- 1 tbsp Cumin
- 1 tbsp Ginger
- 1 tbsp Cinnamon
- 1/2 tbsp Turmeric
- Black Pepper
- Fresh coriander to garnish
- Chop the prunes and apricots into small chunks, or get the kids to snip them with some safety scissors. Peel and chop the squash into bitesize chunks.
- Put the lamb into a tagine or casserole dish with lid, cover in the spices and mix completely, then add all the other ingredients, except the fresh coriander.
- Put the lid on, and cook in a preheated oven at 150C/Fan 130/Gas 2 for 3 hours.
- Serve with sultana cous cous, flatbreads and fresh coriander.
