Teriyaki Aubergine

This sticky, sweet aubergine is a great tapas dish to share with the family (though note, it is not suitable for children under 12 months as it contains honey). It is quick to throw together too- you could get your kids helping with the prep work, even if it is just mixing the sauce with a spoon. We serve this as tapas, but you could serve it with some rice and some other steamed veggies and tofu/protein of choice as part of a wider meal

Serves: 4 as tapas, 2 as main

Prep: 5-10 Mins

Cooking Time: 30 Mins

Ready In: 40 Mins

  • 1 Aubergine
  • 1 tbsp Pomegranate Molasses 
  • 1 tbsp Honey
  • 1.5 tbsp Light Soy Sauce 
  • 1 Garlic Clove, grated
  • Thumb-sized Fresh Ginger grated 
  • Optional: Sesame Seeds
  1. Preheat the oven to 200C/ 180C Fan/ Gas 6.
  2. Chop the aubergine into bite-size pieces and place in a high-sided ovenproof dish (I use a small pie dish very often)
  3. Mix the remaining ingredients together in a bowl and pour over the aubergine and thoroughly mix it up. Pop in the oven for 30 minutes, until soft and sticky. Halfway through cooking give it a mix.
  4. To serve, place in a tapas dish and top with sesame seeds (if you are using them). Enjoy!

Additional Information

Whilst I wouldn't tout this as the healthiest of dishes due to the sugar content, it is incredibly delicious and in my books if that tempts your child to try aubergine and enjoy it, then it is a positive step in the right direction (just try and offer a non-sugary version occassionally too!)
