Pan Con Tomate (Spanish Tomato Toast)

Make this classic Spanish tapa at home with the simplest ingredients to make a healthy breakfast, lunch, snack or side dish! This is suitable from ages 6m+ but please read the notes for more info.

  • 2 Salad Tomatoes
  • 2 Slices Bread

Optional:

  • 1 Clove Garlic
  • Basil Leaves
  • Salt
  • Olive Oil
  1. Place a sieve over a large bowl. Grate the tomato into the sieve and discard the skin leftover. Allow the juice to drain for about 5-10 minutes (give it a bit of a nudge occasionally to help with this). At this stage you may want to add a little salt, but if you are on a low salt diet or serving small kids then skip this step.
  2. Meanwhile, toast your bread, and run the garlic over the toast- it's surprising how strong this can be so if you're not a fan of garlic then again this is an optional step or do it lightly!
  3. Top the toast with your tomato pulp and sprinkle over the basil leaves if you are having them, you could also drizzle a little olive oil over at this point too.

Additional Information

This is best with seasonal tomatoes. Avoid adding salt for weaning infants.
