Summer Corn Salad

Make this salad at your next BBQ, you won't be disappointed! This is really refreshing, and the corn and pomegranate seeds catch the eye making it more appealing to kids and adults alike!

Serves: 3-4

Ready In: 15 Mins

  • Half a cucumber
  • 2 corn on the cobs
  • Seeds from half a pomegranate
  • 100g hard goats cheese
  • 100g frozen edamame beans
  1. Using a grill or grill pan, lightly char 2 corn on the cobs, then slice the kernels off the cob and put to one side.
  2. Cook the edamame beans to packet instructions, then allow to cool too (I run them under cold water to do this quickly)
  3. Finely slice the cucumber and place in a large bowl. Cube the goats cheese and add this too, along with the corn and edamame beans. Finely, top with pomegranate seeds and serve.

Additional Information

To make this quicker you could use tinned sweetcorn, but you would lose the charred taste, which makes it taste much more exciting if you ask me.
