Lemon Drizzle Cake
This is a really quick and easy Lemon Drizzle cake to make with your kids at home that can be enjoyed all year round.

- 4oz/115g Butter or Margarine
- 6oz/170g Caster Sugar
- 6oz/170g Self Raising Flour
- 2 Eggs
- 1 Large Lemon
- 4 Tbsp Milk
- 3 Tbsp Icing Sugar
- Preheat the oven to 180C/ 160 Fan/ Gas 5 and line a 2lbs loaf tin. Grate the lemon zest and keep the lemon to one side for the drizzle.
- Cream the butter/margarine and caster sugar until pale. Add the flour, eggs, lemon zest and milk. Mix it all together until thoroughly combined and when you lift the whisk you get soft drops.
- Pour the cake into the lined 2lb loaf tin and bake for 40-45 minutes until firm. Meanwhile, squeeze the lemon to get all the juice, then slowly add it to the icing sugar until you get a thin icing/drizzle.
- When the cake comes out of the oven pour the drizzle straight over the cake, making sure you cover the whole cake. Leave to cool completely in the tin before serving.

Additional Information
Because the drizzle needs to go on the cake immediately after it has come out of the oven I would advise that only adults do this part if you are making It with children.
