Ratatouille
Make this classic French dish for an easy, healthy dinner. This is perfect for batch cooking and freezing small portions too.

- 1 Onion
- 1 or 2 Cloves Garlic
- 1tbsp Olive Oil
- 1 Large Aubergine
- 2 Courgettes
- 1 Red Pepper
- 2 Tins Tomatoes
- 1tbsp Balsamic Vinegar
- 2 Tsp Mixed Herbs
- Dice the onion and crush the garlic. In a large frying pan, add the oil, garlic and onion and lightly fry until the garlic is soft. Meanwhile, chop the aubergine, pepper and courgette into bitesize pieces (or smaller if you prefer for weaning).
- Add the remaining ingredients to a pan. Fill one of the tins of tomatoes halfway with water and add that too. Bring the mix to a boil, then pop a lid on and simmer for 30-40 minutes (until the veggies are soft and the sauce has thickened slightly.
- Serve with pasta or rice, or even in a baked potato.
