Lemon Biscuits

These biscuits are great to make with kids, and look great at parties. Of course you can get creative with different shapes too!

Makes: 20+ Biscuits

Prep: 40 mins + 30min Chilling

Ready in: 90 mins + Cooling Time

  • 1-2 lemons
  • 350g Flour
  • 225g Butter
  • 1 tsp Baking Powder
  • 1 tsp Lemon Extract
  • 1 tsp Vanilla Extract
  • 1 Egg
  • 400g Icing Sugar
  • Smarties
  1. In a freestanding mixer, cream the butter and 100g icing sugar together. Scrape the sides down, and add in the egg, lemon and vanilla extract and mix thoroughly again.
  2. Add in the flour, baking powder, zest of 1 lemon and mix again until the dough comes together. Roll into a ball, wrap in clingfilm and chill in the fridge for 30-60 minutes.
  3. Preheat the oven to 170C/ 150 Fan/ Gas 3 and line a couple of baking trays with parchment paper. Flour a surface, then roll out the dough till about 5mm thick. Cut into flower shapes then place onto the baking sheet. Continue to roll and cut the dough until you have no more dough left.
  4. Bake for 10-12 minutes or until the edges turn slightly brown. Leave it to cool on the tray for a few minutes before cooling completely on a wire rack.
  5. To make the icing, mix 300g icing sugar with enough lemon juice to make a thick but spreadable icing- roughly 1-2 lemons to do this. Turn the biscuit upside down and lightly dip into icing, smooth over the icing if needed, and pop a smartie in the middle. Repeat for all biscuits then enjoy!

Additional Information

These are fairly high in sugar, so should definitely be treated as a one-off/occasional treat. The smarties are not suitable for small children (especially weaning infants) as they are choking hazards.
