Cranberry Orange Muffins

Bake a batch of these low-sugar muffins to get in the festive spirit! Your house will smell incredible after making these, and it can be a great activity to make with your kids too. These have very little sugar in them- just the sugar from the small amount of honey and what is in the fruit, so it is a great option for the whole family if you are mindful of how much sugar might be consumed over the festive period!

  • 250g Self Raising Flour
  • 1tsp Baking Powder
  • 2 Oranges, zest only
  • 3tbsp Orange Juice
  • 1/2tsp Ground Cardamom
  • 150ml Whole Milk
  • 50g Butter, melted
  • 2 Eggs
  • 3tbsp Honey
  • 125g Fresh Cranberries
  1. Preheat the oven to 170C/150C Fan/Gas 3. Grease a muffin tin with a little butter.
  2. In a measuring jug add the milk and 3tbsp of the orange juice, Stir (this will start to make a butter milk so don’t panic when it thickens).
  3. In a large bowl add the self-raising flour, baking powder, the orange zest and ground cardamom. Give a little stir.
  4. Whisk the eggs, then add the eggs, melted butter, milk and honey to your flour mix. Stir to combine then finally fold in the cranberries.
  5. Spoon into the muffin tray and bake for 20-25 mins. Leave to cool in the tin for about 10 minutes before turning out onto a wire rack to cool completely.
