Makes: 12
Prep: 10 mins
Cooking Time: 40 mins
Ready In: 50 mins
- 1 Lemon
- 225ml milk
- 200g Feta
- 75g Sundried Tomatoes
- 100g Green Olives
- 300g Self Raising Flour
- 1 Egg
- 150ml Olive Oil
- 1 tbsp Oregano
- Preheat the oven to 190C/170C Fan/Gas 5. Add the lemon juice to the milk, give a stir then put to one side. The milk should thicken (this is homemade buttermilk).
- Chop the sundried tomatoes, half or quarter the olives and crumble the feta. Add all the ingredients to a large bowl, give a thorough stir, and spoon directly into a muffin tin (no need for a muffin case).
- Bake for 30 minutes, or until golden and cooked through. If in doubt, put a skewer through the middle and if it comes out clean, then they're done.
