Mediterranean Muffins

These muffins bring a slice of sunshine to your day! Full of Mediterranean flavours, these are a tasty alternative to a sandwich for any lunch or you could snaffle one for a snack too! You can also get kids involved in making these too which is a win.

  • 1 Lemon
  • 225ml milk
  • 200g Feta
  • 75g Sundried Tomatoes
  • 100g Green Olives
  • 300g Self Raising Flour
  • 1 Egg
  • 150ml Olive Oil
  • 1 tbsp Oregano
  1. Preheat the oven to 190C/170C Fan/Gas 5. Add the lemon juice to the milk, give a stir then put to one side. The milk should thicken (this is homemade buttermilk).
  2. Chop the sundried tomatoes, half or quarter the olives and crumble the feta. Add all the ingredients to a large bowl, give a thorough stir, and spoon directly into a muffin tin (no need for a muffin case).
  3. Bake for 30 minutes, or until golden and cooked through. If in doubt, put a skewer through the middle and if it comes out clean, then they're done.

Additional Information

These are a little high in salt  so not really suitable for those under 1, but they make great picnic additions over summer and kids can get involved making them!
