Turkey & Peach Rice Salad
This is an amazing summer meal and would brighten up any lunchbox too! You can get your kids involved making it too, allowing them to get hands on with the veggies. You can also substitute the turkey for chicken- perfect if you have any leftover chicken to use up for another meal.

- 2 lemons
- 2 tbsp olive.oil
- 1 tsp dijon mustard
- 250g wild rice
- 400g tin peach slices in peach juice
- 1 tbsp reserved peach juice
- 100g asparagus
- 4 turkey fillets
- Cook the rice according to packet instructions, drain and rinse under cold water to quickly cool it down. Set aside in a large bowl. Whilst the rice is cooking griddle the 4 turkey breasts until cooked- this will only take a few minutes on each side. Slice into strips and then leave to cool.
- To make the dressing, squeeze the juice from 2 lemons into a bowl, then add the olive oil, dijon mustard and peach juice. Whisk together and set aside.
- Finally, snap the asparagus into 2 or 3 pieces, and steam for 3-5 minutes. Run under cold water to cool down quickly.
- All that remains is to mix the rice, turkey, peach slices and asparagus together with the dressing and serve in the middle of the table for everyone to tuck in to!

Additional Information
When we make this at home I cook the rice and turkey whilst the kids make the dressing and snap the asparagus. I then cook the asparagus and cool it before they assemble the dish.
