Coronation Chicken

The perfect sandwich filling for using up leftover chicken or simply a more indulgent lunch. This is also a great way of getting some fruit into the diet. If you want to make this dairy-free use mayo, or egg-free use yoghurt- both options work really well (though using yoghurt would bring the fat content down considerably if this is something you are concerned about).

  • 200g cooked chicken
  • 3 tbsp Natural or Greek Yoghurt or Mayonnaise
  • 1 tbsp Mango Chutney
  • 1 tsp Curry Powder (mild)
  • Large Handful Raisins
  • 8 Dried Apricots
  1. Cut the apricots and chicken into small, bitesize pieces.
  2. Mix all the ingredients up in a bowl and put into a sandwich or serve on a salad.

Additional Information

If you want to get kids involved with this then they can easily do the mixing. They can also try cutting the apricots with safety scissors or chopping the chicken with an age-appropriate knife.
