Coconut Oat Cookies

These are the perfect low-sugar treat. These are great to make with kids too and suitable for most ages- they are chewy in texture so if you want to introduce to weaning babies ensure they are competent chewers and/or these do not pose a choking hazard by slicing them thinly or breaking into small pieces.

  • 2 Ripe Bananas (~240g)
  • 100g Rolled Oats
  • 50g Desiccated Coconut
  • Optional: 50g Chocolate
  1. Preheat the oven to 200C/180C Fan/Gas 6. Line a baking sheet with parchment paper.
  2. Mash the bananas with the back of a fork until smooth. Mix in the oats and coconut until thoroughly combined.
  3. Dive the mix into approximately 12 golf ball sized balls. Place onto a lined baking tray and flatten slightly.
  4. Bake for 10-15 minutes or until starting to go golden around the edges.
  5. Leave to cool before serving.
  6. Optional: Melt the chocolate and drizzle over the cookies. Allow to harden before serving.

Additional Information

Use up your ripe bananas for this recipe- the riper they are the sweeter these will be. You can add a small drizzle of chocolate should you wish too but this is unnecessary (though I find helpful when trying to entice toddlers if they are initially suspicious of the cookie!). If you need this to be gluten free ensure you use gluten-free oats.
