Bacon & Mushroom Pasta
This speedy pasta is perfect for making midweek. I often switch up the green veggies in this- pictured here are green beans but my second favourite option is spinach- which is much better for weaning infants and those of you trying to boost your iron content (you could of course serve both green beans and spinach too). Simply stir the spinach in at the end of cooking until wilted.

- 300g Pasta
- 6-8 Bacon Rashers (Smoked or Unsmoked, though Unsmoked is normally lower in salt)
- 250g Mushrooms
- 1tsp Oregano or Italian Seasoning
- 200g Green Beans
- 3tbsp Crème Fraiche
- Black Pepper
- Boil the kettle to get water for your pasta. Then cook the pasta to packet instructions (usually 12-15 minutes). Add the green beans into the water for the final 5-8 minutes (go for 8 minutes if you want the beans to be softer for weaning infants).
- Cut the bacon into bitesize pieces (remove the fat too). Slice the mushrooms. Pan fry the bacon and mushrooms with the oregano or Italian Seasoning- if it looks a little dry add a tiny bit of olive oil to the pan, but keep it to a minimum.
- Add a ladle full of pasta water to the bacon and mushroom mix, then drain the pasta and green beans. Add them to the bacon and mushrooms, then stir in the creme fraiche and add a good grinding of black pepper to taste.

Additional Information
Bacon is not the best thing to serve weaning infants due to its salt content, but a small amount would be OK. Prioritise the veggies on the plate instead and opt for unsmoked bacon until they are a bit older.
