Tuna With Lemon Spaghetti
This is like summer in a dish and a real treat to eat! It is super quick to make too, so perfect when you don't have much time on your hands.
Serves: 4
Prep: 5-10 mins
Cooking Time: 15 mins
Ready In: 25 mins
- 4 Tuna Steaks
- Chili flakes (optional)
- 300g Spaghetti
- 2 Unwaxed Lemons, zest & juice
- 1 tbsp Olive Oil
- 200g Tenderstem Broccoli, trimmed
- 8 Sweet Baby Peppers, halved and deseeded
- 12 Cherry Tomatoes, halved
- Cook the spaghetti according to packet instructions and for the final 3-4 minutes add in the broccoli. Drain.
- Meanwhile, spinkle a small amount of chili flakes on to your tuna steaks if your using it. Heat 1tbsp of oil in a large pan and fry the tuna steaks on a medium/high heat for about 3 minutes on each side or until cooked through.
- Remove the tuna from the pan and add in the peppers. Cook for about 2-3 minutes then add in the pasta, broccoli, tomatoes and the juice and zest of two lemons. Cook for about 2 more minutes. The tomatoes should be starting to cook but not squishy!
- Serve the spaghetti and veg onto 4 plates, then top with the tuna steak and enjoy.

Additional Information
I have made this recipe with the tuna cooked through because of catering for the little ones at home- if you prefer your tuna rare then half the cooking time on each side.
