Asparagus Puff Pastry Bundles

This is really simple to make and absolutely delicious. It is the perfect recipe for when asparagus is in season and makes a great lunch that can be eaten hot or cold. You could omit the ham if you want to, but it does give the dish an extra salty kick which I think is needed.

  • 320g Ready-Rolled Puff Pastry (or GF version)
  • 4 Slices Parma Ham
  • Gruyere Cheese (Measure with your heart)
  • 8-12 Spears Asparagus
  • Poppy Seeds
  • 1 egg, whisked
  1. Preheat the oven to 200C/ 180C Fan/ Gas 6. Line a baking tray with baking paper.
  2. Unroll the puff pastry and divide it into 4 equal quarters. Place each rectangle on the baking tray and leave a gap between each for when it bakes in the oven.
  3. Lay a slice of ham across the centre of each rectangle, then top with grated cheese (do enough cheese to lightly coat the ham). Finally, snap the wooden ends off the asparagus and lay 2-3 asparagus spears in the centre of each rectangle.
  4. Bring 2 opposite corners of the puff pastry up to join in the middle and press to seal (I always think this looks like the pastry is hugging your asparagus!).
  5. Brush the puff pastry with your whisked egg, and then sprinkle over some poppy seeds to taste.
  6. Bake in the oven for 20-25 minutes or until golden brown.
