Tomato & Mascarpone Pasta
This is my family-friendly take on the viral Feta & Tomato Pasta recipe that you have no doubt seen before. Unlike the Tik-Tok recipe, I have swapped the feta for Mascarpone, which reduces the salt content, making it a better option for those on a low salt diet as well as for small children (including weaning infants). This is simplicity at it's best- a super quick, cheap midweek meal you will make over and over again!

- 300g Pasta
- 250g Mascarpone
- 500g Cherry Tomatoes
- 1 tsp Italian Seasoning (or mixed herbs)
- Olive Oil
- Fresh Basil to garnish
- Put a tub of mascarpone in a Pyrex dish then add the cherry tomatoes. Drizzle them with olive oil and Italian seasoning, then bake in the oven at 200C/Fan 180C/ Gas 6, for 30-40 minutes. Meanwhile cook 300g pasta.
- Remove from the oven and add about 2 tbsp reserved pasta water and the cooked pasta. Mix it all up and serve topped with basil leaves and a side of greens.

Additional Information
If you are serving this to small children ensure the cherry tomatoes are cut prior to serving to ensure they are safe and no longer a choking risk.
