Slow Cooker Chilli Con Carne

Batch cooking at its finest and a proper winter warmer! This is my twist on the traditional Chilli Con Carne dish. Instead of using beef mince, I am using thick chunks of beef stewing steak, and I have upped the veg content, making it serve more people whilst adding extra nutrients to the dish. This is high in iron, and shreds easily making it perfect for weaning infants too.

- 1 Glug Olive Oil
- 1 onion
- 3 Cloves garlic, crushed
- 700g Stewing Beef (cut into chunks if not bought like that already)
- 1 tin tomatoes
- Half tin water
- 1 beef stock cube
- 1 or 2 peppers
- 1 butternut squash
- 1 tin kidney beans, drained
- 1 tbsp smoked paprika
- 1 tsp cinnamon, cumin, coriander, oregano, all spice and chilli powder
- Sautee the onion in a little olive oil until soft and then add to the slow cooker (or do this step in the slow cooker if yours has this capability).
- Meanwhile, peel your butternut squash and chop into bitesize pieces. Cut your peppers into bitesize pieces too.
- Add the remaining ingredients to your slow cooker, stir and then set to cook for 6-8 hours.
- Serve with rice- you could top it with some sour cream and coriander if you want too. Freeze and leftovers

Additional Information
If you are serving to weaning infants, please make sure you modify the chunks to reduce any choking hazards (for instance squish the beans and shred the beef). Additionally, young children may enjoy dolloping on sour cream- particularly if they are not fans of heat (though this is quite mild).
