Beef Massaman Curry

Try this delicious mildly spiced curry on days when you are short on time but want big flavours! This winter warmer makes the slow-cooker do all the hard work for you, creating such tender beef, even the smallest in the family will be able to enjoy it (see notes below for weaning infants).

  • 1 Tbsp Vegetable Oil
  • 4 Tbsp Massaman Curry Paste
  • 1 Tsp Cornflour
  • 500g Beef Stewing Steak, cubed
  • 400ml Coconut milk
  • 1 White Onion, diced
  • 450g Potatoes, scrubbed & cubed
  • 1 Tbsp Tamarind Paste
  • 1 Cinnamon Stick
  • 1 Tbsp Soft Light Brown Sugar
  • 3-4 Kaffir Lime Leaves
  • Roughly chopped peanuts, lime wedges and fresh chillies to serve.
  1. Heat the oil in a pan and add the beef, cornflour and curry paste. Seal the beef then add to the slow cooker. Alternatively do this in your slow cooker if it has a sautée setting.
  2. Add the remaining ingredients (except the peanuts, lime and chillies) and cook in the slow cooker for 6-8 hours.
  3. Serve with jasmine rice and top with the chilies and peanuts with the lime wedge on the side.

Additional Information

If you buy a mild curry paste this is suitable for children of all ages. However, you will want to avoid adding the chilies until over the age of 1 and the peanuts will need to be finely chopped until over the age of 2 at the youngest.
