Ricotta & Tomato Toast
Sometimes the simplest of breakfasts are the best. This is a perfect breakfast, light lunch or snack for any age and best in the summer months when tomatoes are in season.

- 2 Slices Bread
- Ricotta
- 1 finely sliced tomato
- Basil leaves, torn (optional)
- Toast the bread.
- Spread with ricotta.
- Top with sliced tomatoes and top with the basil leaves if you like.

Additional Information
Ricotta is a great low salt cheese, making it a great option for weaning infants too. You can also serve weaning babies very thinly sliced rounds of tomato too for them to hold (though you will probably want to serve it on the side of the toast rather than on top at this age!). To help boost the nutritional value you could use sourdough bread.
