Prawn Cocktail Cups

A retro classic appetiser, this is my take on the classic dish from the 60s! Whilst traditionally served in little glasses (ideally martini glasses), I have decided to use the lettuce as the cup instead. I have also added in some diced mango- this helps add a splash of colour!

  • 1 gem lettuce
  • 1/2 an avocado
  • 1/2 a mango
  • 1/3 of a cucumber
  • 150g-200g cooked king prawns (defrosted if frozen)
  • 1tbsp mayonnaise
  • 1tbsp ketchup
  1. Peel the leaves off a gem lettuce and arrange on a plate (you will want about 6-8 leaves). Save the heart of the lettuce for another day.
  2. Finely dice roughly 1/2 an avocado, 1/2 a mango and 1/3 of a cucumber. Place the tiny pieces inside the lettuce cups.
  3. In a separate bowl place 150g-200g cooked king prawns. Add in 1tbsp mayonnaise and 1tbsp ketchup and stir to thoroughly combine.
  4. Place the prawns in the middle of the lettuce cups and serve. You could sprinkle a little paprika over the top of the prawns too if you want a bit more oomph.

Additional Information

If you want to serve to small children I would recommend halving the prawns lengthways to reduce the risk of choking.
