PBJ Baked Oats

This warming winter breakfast is fast becoming a favourite in my household! This has no added sugar too (there's obviously some in the banana and jam but in the grand scheme of things I think we can overlook it!) and it tastes absolutely delicious!

Cooking Time: 40 Mins

Ready In: 45 Mins

  • 80g Oats
  • 1tsp Baking Powder
  • 2 Over-ripe bananas
  • 60ml (4tbsp) Peanut Butter
  • 2 Eggs
  • 2-4tsp Jam (I use Strawberry)
  • Spray Oil
  1. Preheat the oven to 180C/160 C Fan.
  2. Put your oats, banana, peanut butter, eggs and baking powder in a blender and blitz until smooth.
  3. Spray 2 ovenproof ramekins with oil and then divide the mixture equally between the two.
  4. Spoon 1-2 tsps of jam (I use strawberry) into each ramekin and swirl into the mix slightly. I like leaving a bit on top too!
  5. Bake in the oven for 35-40 minutes. Allow to cool slightly before serving.

Additional Information

You could add extra chopped berries to this too if you want to- many kids prefer them on the side though as this helps them more easily identify what they're eating. Up to you!
