Kale & Pesto Muffins
These muffins are the perfect snack or lunchbox filler for kids and also for baby-led weaning (they also sneak in an extra bit of veg too)! Kale can be a tough-sell to some kids, and this can be a good way of introducing it in a different format. Whilst I would never lie about what is in the muffin, the fact it doesn't look like a leaf can make it much more appealing.

- 300g Self-Raising Flour
- 100ml Olive Oil
- 75g Kale (weight without centre rib)
- 1 Lemon, juice only
- 1 Egg
- 225ml Whole Milk
- 125 Cheddar, grated
- 25g Parmesan
- 1 tbsp Pesto
- Pre-heat the oven to 180C/160C Fan/Gas 4. Add the lemon juice to the milk, whisk, then leave to one side to thicken- the mixture will turn into buttermilk.
- Blitz the kale in a food processor or really finely chop. Add all of the ingredients to a large bowl, and mix with a wooden spoon or mix in a freestanding mixer.
- Spoon the mixture into the muffin tin (no need for cases) and bake for 25-30 minutes, until golden.
- Leave to cool in the muffin tin for a few minutes, before putting onto a cooling rack to cool completely.
