Greek Rice
This Greek-style rice dish pairs perfectly with grilled meats, fish, falafel and a greek salad. This dish suitable for the whole family (6months+) and it is perfect going into the summer. Try it with our Tzatziki recipe too!

- 1 Onion
- 2 Cloves Garlic
- 300g Easy Cook Long-Grain White Rice
- 500ml Vegetable Stock (aim for reduced salt)
- 1 Lemon
- Large Handful Fresh Mint
- Large Handful Fresh parsley
- Dice the onion and crush the garlic. In a large saucepan, lightly sautee these in the olive oil until the onion is soft.
- Add the rice to the pan and give it a quick stir. Pour in the stock and then bring to the boil. Reduce to a simmer, put a lid on the pan and leave for 12-15 minutes- after this time the rice should be cooked and the stock absorbed.
- Add in the zest and juice of the lemon, along with the finely chopped mint and parsely. Give it a thorough mix, and leave to rest for roughly 10 minutes before serving.

Additional Information
This recipe is suitable for the whole family (from 6months+) however, because the rice is cooked in stock, try and use a reduced salt or 0% salt stock cube if you are catering for small children (particularly under 12 months). Alternatively you could just use water- the lemon and herbs will give it plenty of seasoning for weaning infants.
