Greek Rice

This Greek-style rice dish pairs perfectly with grilled meats, fish, falafel and a greek salad. This dish suitable for the whole family (6months+) and it is perfect going into the summer. Try it with our Tzatziki recipe too!

  • 1 Onion
  • 2 Cloves Garlic
  • 300g Easy Cook Long-Grain White Rice
  • 500ml Vegetable Stock (aim for reduced salt)
  • 1 Lemon
  • Large Handful Fresh Mint
  • Large Handful Fresh parsley
  1. Dice the onion and crush the garlic. In a large saucepan, lightly sautee these in the olive oil until the onion is soft.
  2. Add the rice to the pan and give it a quick stir. Pour in the stock and then bring to the boil. Reduce to a simmer, put a lid on the pan and leave for 12-15 minutes- after this time the rice should be cooked and the stock absorbed.
  3. Add in the zest and juice of the lemon, along with the finely chopped mint and parsely. Give it a thorough mix, and leave to rest for roughly 10 minutes before serving.

Additional Information

This recipe is suitable for the whole family (from 6months+) however, because the rice is cooked in stock, try and use a reduced salt or 0% salt stock cube if you are catering for small children (particularly under 12 months). Alternatively you could just use water- the lemon and herbs will give it plenty of seasoning for weaning infants.
