Mango Salmon
This Mango Salmon is a brilliant midweek meal- it can be ready in just 30 minutes, and it is super tasty!

- 4 Skinless Salmon Fillets
- 3 tbsp Mango Chutney
- 1 tbsp Light Soy Sauce
- 1 tsp Wholegrain Mustard
- 1 tsp Dijon Mustard
- Juice of 1 lime
- 1 Garlic Clove
- 1 thumb-size piece of Ginger
- Preheat the oven to 200C/ 180 Fan/ Gas 6.
- Grate the ginger and crush or grate the garlic. Add all the ingredients, except the salmon, in a large bowl and mix together.
- Put the salmon in a high-sided dish- I use a pie dish. Pour the sauce over the salmon and bake for 15 minutes, until the salmon is cooked through. Serve with rice and some steamed veg.

Additional Information
This is best with plain mango chutney, rather than a heavily spiced one, in my opinion, but feel free to experiment!
