Cream of Brocolli Soup

Broccoli Soup or Hullk Soup- you decide! Either way, this is a great sustainable dish that is packed full of vitamin C and it is easy to make. This recipe uses the stalk and the florets of broccoli saving you money and reducing your food waste. Broccoli is naturally high in Vitamin C, as well as being a source of vitamin K and Folate- perfect in the winter months if you want to give your immune system a little boost at lunchtime.

  • 500g Broccoli (including stalk)
  • 1 Onion
  • 1 Small Potato (80-100g)
  • 500ml Vegetable or Chicken Stock
  • 3tbsp Creme Fraiche
  1. Roughly dice the onion and put in a pan with 1tbsp of olive oil. Sautee on a low heat for 5-10 minutes, stirring occasionally whilst you prepare the rest.
  2. Peel the potato and roughly chop into small pieces. Chop off the end of the broccoli stalk, and then roughly chop up the broccoli.
  3. Add the potato and broccoli to the pan with the onion, and then add in the vegetable or chicken stock. Bring to the boil, then reduce to a simmer. Put a lid on the pan and cook for about 20 minutes, stirring occasionally, until the potato and broccoli is soft.
  4. Remove from the heat, and blend the soup with a stick blender until smooth, then stir through 3 tbsp creme fraiche. Serve with some cracked black pepper.

Additional Information

If you are making this for small children try and use a reduced salt stock cube- you could also just use water. Chopped chives work really nicely on this as a garnish too.
