Courgette & Leek Bake
The perfect side dish for Sunday Lunch. This is great to make with kids too- I should know, I grew up making this at home with my parents! The trick with this dish is to not skimp on the pepper.

- 1 Large Leek
- 1 Large Courgette
- Cheddar
- Black Pepper
- Preheat the oven to 180C Fan/200C/ Gas 6. Thinly slice the large leek and courgette into rounds.
- Put half the leek in a thin layer in an oven proof dish (we use a quiche dish) then top with a layer of half the courgette. Grate over some cheddar cheese and then grind over some black pepper.
- Repeat step 2 (add a second layer of the leeks and a second layer of courgette, top with more grated cheddar and pepper).
- Pop in the oven for 30-40 minutes until golden brown.

Additional Information
Kids usually love doing the layers on this and I must say I find it quite calming to do too! Older kids can help do the slicing and grating too- please be your own judge on this and use age appropriate knives.
I haven't put a measurement for the cheese- measure it with your heart, but aim for a thin layer that covers your vegetables each time.
