Apple & Rhubarb Crumble

Is it even Autumn unless you're eating crumble? This recipe is super easy to throw together and a great way to get kids eating some yummy fruit. The nutty topping add an extra level of yum too! If you want to get kids involved then they can help slice the fruit, layer the crumble, and make the topping (watch out for fingers with the blender)- rhubarb also makes excellent swords/magic wands!

  • 3 Cooking Apples
  • 400g Rhubarb
  • Optional: 2 tsp Caster Sugar
  • 110g Plain Flour (or GF Flour)
  • 100g Pecans
  • 75g Butter (or Dairy-Free alternative)
  • 75g Demerara Sugar
  1. Preheat the oven to 200C/ 180C Fan/ Gas 6.
  2. Peel and core the apples. Finely slice the apples and rhubarb. Layer the apple and rhubarb in a large pie dish. You may wish to sprinkle 2 tsp of caster sugar in between the layers- this is completely optional though.
  3. In a blender, blitz the flour, butter pecans and demerara sugar until it resembles a sandy mixture. Scatter this over the crumble to form a thick layer.
  4. Bake in the oven for ~40 minutes, after which time the crumble should be golden brown and the filling cooked through.
